Every attar here begins in a copper deg over a wood fire, exactly as it did in 1912. No gauges and no thermostats — the distiller reads the fire by its sound and feeds it by hand, for as long as the flowers need.
Vapour crosses the bamboo chonga and condenses straight into pure sandalwood oil waiting in the bhapka. No alcohol enters at any stage of the process — which is why a single drop stays with you through the day.
Ahmed Ashhar carries forward a practice his family started three generations ago in Kannauj — the same copper still, the same Deg-Bhapka method, 114 years on. Nothing about it has been made faster.
